Where Scatter Brained Moms Go...

Have you ever forgot the diaper bag? Please tell me that I am not the only one. I thought we were prepared to go to a lunch date with my friend but once I arrived at the coffee shop I realized I had forgotten everything. I didn't have the diapers and I didn't have the wipes. I usually carry an extra outfit just in case and I didn't have any of it. It was an official mom problem where I start to think of what I can do and where I can go if there is an accident. Usually my husband will leave a few diapers in the car... but it looked like that supply had diminished.  I was S.O.L. and I needed diapers real quick. Luckily there was a Babies"R"Us near by; where I was able to stop in and get all the necessities I needed for my travels that day.  Running into the store I had to go to the bathroom; and I always hate going to public bathrooms with my toddler knowing that she was going to run around the restroom area. I was shocked to know that there were little seats in the stalls that allowed you to place your baby in them... and of course Babies"R"Us would be prepared and have them there. I collected myself and put Solin in a cart and we went around the store and found all of the things we needed like Huggies Little Movers which are new and improved. They leak lock for up to 12 hours and have a try touch that absorbs upon contact. I was very impressed and I knew we needed them for our day out of town. 
Solin was kind of in a bad mood so we decided to check out the toys too...
Our Babies"R"Us haul consisted of the NEW Huggies Little Movers plus wipes. Some snacks to keep SOlin on the go. A polka dot outfit. Hand sanitizer and some boodgie wipes.
 Everything in this photo was necessary and consumed or used on this very day! I think I will have two back up diapers bags next time to be prepared
After our shopping spree in Babies"R"Us we continued with our day and walked downtown and enjoyed some fun in the sun and let Solin run amuck!

Grocery Shopping at Sam's Club

Did you know that August is national Breast feeding month? When I read that in the Healthy Living Made Simple magazine from Sam's Club it made me feel triumphant considering Solin was weaned this month. It was a long process but she is official an independent toddler. Now that she doesn't drink breast milk any more I have taken it upon myself to make sure she is getting all of the best nutrition she can.When we went to Sam's Club the other day I took her shopping with me and she helped me find some good things throughout the store:
The main reason I go to Sam's Club is to buy the coconut oil. I use this oil for everything. You can even use it as moisturizer for your dry skin! But truly I love to put a teaspoon in a pan with my morning scrambled eggs or when my husband makes his vegetable stir fry. And after reading this article in Healthy Living Made Simple about how great coconut is... I'm not trying to gloat but I must say that I am proud of myself because there are so many benefits of using coconut. You can drink coconut water, use coconut milk in recipes, or sprinkle your food with coconut flakes. All of these options give you an extra nutrition factor that wasn't there before. I will be using my coconut oil to roast Brussels sprouts with pumpernickel salt.
By the look on Solin's face she doesn't seem to be a big fan of coconut oil. But truly she doesn't know that this is what we cook her favorite vegetables in!
Solin is at the stage where she knows the difference in temperatures. However, she calls everything "Hot" even when it's cold. When we felt the refrigerator door at Sam's Club Solin yelled "Hot, Hot, HOT!"

While we were in Sam's Club for over an hour. Solin got a little restless. I took her out to hold her for a while. But then she just wanted to run around and climb on everything:
I had to take a seat to let her do her thing:
And usually I take my time to send snaps to my family in Montana:
We can't forget about the bananas for my little monkey:
When I go to Sam's Club I like to buy the fresh produce in bulk. We usually find spinach, Brussels sprouts, and artichokes at a great price:

Recipe - Gluten Free - Vegetarian Pizza

From the time my daughter was six months old until now she has had a gluten intolerance. She would always have all of the symptoms after she would try a dinner roll or toast. After speaking with the doctor they told us to limit her gluten intake and try gluten free foods. I found a Freschetta Gluten Free Cheese Pizza in the freezer section at Publix and thought this would give me a great chance to let my daughter Solin enjoy pizza night at our house. Reading this article in the New Yorker really shines some light on the gluten factor. It's crazy to know that 15 million Americans have food allergies and one in every 13 children is affected. So if you think you might have a gluten intolerance or are limiting your gluten intake... this is a great pizza for you to try:
I chose to buy the FRESCHETTA Glutten Free Four Cheese Pizza so I can put my own toppings on it. Not only will the pizza be gluten free but the toppings I chose were going to be vegetarian to support my husbands vegetarian lifestyle.
While at the store I grabbed a red onion, button mushrooms, assorted bell peppers and some sliced olives. I sliced everything up and decorated the pizza accordingly:
Bake at 400 degrees for 20 minutes and you get a delicious crispy crust that you wouldn't believe is gluten free!

Recipe - Chicken Salad Sandwich with Grapes & Almonds

My mom used to make this recipe for us when I was little. If we had left over chicken it was always a treat to have this for lunch the next day. I actually looked forward to leftovers when ever I knew my mom was going to make a chicken salad sandwich. When I saw the FROZEN grapes at Walmart in the produce section I was so excited that they are actually still promoting one of my favorite Disney Movies. I know, I know I am a little to old for FROZEN. But I truly am a big fan of Idina Menzel  and I will admit that I have her live album on my phone and I love it! And maybe, just maybe I secretly sing "Let it Go" and "Wicked" to myself when I am stuck in traffic... but anyway... I wanted to share a delicious lunch recipe with you... and how about these grapes:
Truly the hardest part about this recipe is cutting each individual grape in half:
Chicken Salad Sandwich
FROZEN grapes cut in half
2 cups shredded chicken
1/2 cup red onion chopped
1 cup chopped almonds
1 cup mayonnaise
I put everything in a mixing bowl and mix it all together:
I love my chicken salad sandwiches with croissants. They are amazing when you buy them fresh that day! To prepare them I just cut them in half with a serrated knife and spoon the chicken salad mixture on top:
We love grapes and are so excited about Disney putting some friendly faces in the produce aisle! Which fruit or vegetable would you like to see Disney help market next?
